Bitter gourd (melon) Kholambhu or Curry 

(Sugar and cancer Support)

 

Bitter Melon or Bitter Gourd has excellent anti-carcinogenic and immune boosting properties.

It is one of the best vegetables to relieve sugar or insulin related problems when consumed regularly.

In most of the foods we eat, they have a sweet tendency or taste. Our body requires all 6 different tastes: sweet, salt, bitter, astringent, sour and pungent

We usually lack the bitter taste and bitter melon can compensate that. Here is a South Indian bitter melon curry recipe, which makes the vegetable preparation taste really delicious.

Ingredients:

Bitter gourd - 300 gms or 10 oz (2~3 medium sized vegetable)

Tamarind paste - 1 small lemon size

Black Pepper - 1 teaspoon

Mustard seeds - 1/2 teaspoon

Dry Red chillies- 4

Asafoetida teaspoon or less as digestive aid (available in Asian Indian Stores or online) Urad dal (Black gram without skin) - 1 teaspoon

Curry leaves - 5~6 leaves

Salt to taste

 

Preparation:

  1. Slice the bitter gourd to small thin pieces 1/4 inch

  2. Add tamarind paste to bowl with 2~3 cups of  water and set it on medium heat

  3. Add curry leaves and salt to the tamarind water

  4. Fry the urad dal (black gram), black pepper, chillies, asafetida in 2~3 tablespoons of oil separately

  5. Grind them well to make a paste

  6. Add the paste and cut bitter gourd pieces to the tamarind water

  7. Let it boil in a pan for a few minutes and simmer for 10 minutes

  8. Add 1 teaspoon of sea salt or as required

Serving Suggestion:

The curry has a nice aroma with bitter and sour taste and compliments well with steamed white rice.

Serve one tablespoon of the curry and mix with steamed rice and relish to your health.
